Thursday - roast turkey, refried beans, tortillas, pickled red onions, pico de gallo, cotija cheese, cilantro

Friday - cheesy potato cakes with bacon bits, green onions & sour cream

Saturday - zucchini-corn fritters, mint something

Sunday - canned smoked salmon, refried beans, tortillas, mango-corn salsa, cabbage, cotija cheese, cilantro & mint 

Monday - deconstructed sausage in coconut curry over sweet potato home fries

Tuesday - okonomiyaki

Wednesday - celebratory takeout pizza

Week of Nov 15 - all week long we be frittering

Should note that we finally finished the cranberry sauce with a half recipe of https://www.laurainthekitchen.com/recipes/cranberry-sauce-muffins/  and we were quite happy with the results

Sunday - ramen (pork belly, quick-marinated egg, seaweed, corn, garlic-shallot fry, miso tare)

Monday - zucchini fritters with cheddar chunks (mmmm. fried cheese edges)

Tuesday - paneer with butter chicken sauce over roasted sweet potato home fries

Wednesday - sweet potato salmon fritters with corn

Thursday - grilled steak fajitas

Friday - zucchini fritters with paneer

Oct 30th - time for more soup stock

Saturday lunch - chicken salad sandwiches (cilantro, tomato, mayo, balti seasoning)

Actual: could have used a bit more cilantro and mayo

Saturday dinner - flank steak fajitas with cheddar, fried onions, roasted tomato, horseradish mayo

Actual: the tortillas were perfect with this

Actual: very good.

Monday lunch - chicken quesadilla (leftover chicken salad + cheese + tortillas)

Actual: I probably should have added a bit more tex-mex spicing, but it was surprisingly effective. Also, those tortillas need to be used up very soon, they are getting a bit dry.

Monday dinner - butter chicken paneer on roast sweet potato home fries

Actual: scrambled eggs on toast. Work was draining emotionally.

Tuesday - zucchini-paneer fritters

Actual - ??? We must have had something

Wednesday - eggplant shakshukka

Actual - zucchini fritters

Thursday dinner - butter chicken on roasted sweet potatoes

Friday lunch - green beans, noodles, fried egg, bocconcini, cilantro, tahini sriracha dressing


Tuesday-whenever: need to finish up the green beans with lunches. Probably a mix of eggs and rice and sauces. There is some red lentil stew to use as well

Week of Oct 24 - eggplant, green beans

Eggplant, cilantro, green beans, red lentil coconut curry, lap cheong sausages, roast sweet potato  


Sunday lunch - something with the last of the pork belly (cubano inspired? mazeman noodles? eggplant?) 

Actual: udon, reheat pork belly and roasted eggplant in a soy-mirin-miso-ginger-garlic sauce, fried egg, cilantro

Sunday dinner - lap cheong, green beans, rice, chili crisp

Actual: egg fried rice with lap cheong and green beans, hoisin & oyster sauce

Monday lunch - red lentil coconut curry, green beans, cilantro

Monday dinner - maple chipotle lime chicken and zucchini tacos with pico de gallo

Tuesday lunch - tuna, green beans, sweet potato, egg

Tuesday dinner - butternut squash soup & bread

Wednesday lunch - miso garlic butter green beans, fried egg, red pepper flakes, croutons

Wednesday dinner - eggplant shashukka

Week of Oct 17 - cheese curds, labneh, bacon

There is leftover cranberry sauce from Thanksgiving, cheese curds from making turkey poutine, some labneh in olive oil that needs to be used up before it goes off, and some bacon ends bought from going to the store for cheese curds with a gift certificate. Cilantro because it was on sale and I wasn't thinking when we were grocery shopping

Sunday lunch - labneh, rice, tomato, egg

Sunday dinner - southwest panzanella (marinated grilled zucchini, roasted pepper, cilantro, cheese curds, bacon, croutons, pickled red onion, maple chipotle lime dressing) 

actual: no bacon or pickled red onion, but overall very successful

Monday lunch - labneh, lentils, tomato, bacon

Monday dinner - zucchini, egg, bacon, salsa fresca, cheese curd tacos onion soup with toast and cheese curds

actual: it was the start of the cold weather, and the idea of using some of the soup in the freezer really appealed. Added some of the beef jus from last week's short rib braise, which improved a frankly mediocre onion soup very well. I rushed the soup and hadn't allowed the onions to caramelize enough before adding stock.

Tuesday lunch - labneh, lentils, bacon, rice, tomato

Tuesday dinner - coleslaw with orange segments, grilled chicken

actual: okonomiyaki to finish up the cabbage

Wednesday lunch - roast eggplant, lentils, egg, rice, tomato jam, labneh, tahini

Wednesday dinner - chicken, zucchini, red onion, salsa, cheddar, tortillas

Actual: forgot the red onion, but worked out mostly ok. A bit liquidy from the zucchini

Thursday lunch - pork belly udon soup

Actual: moved to Saturday lunch, added to 

Thursday dinner - byo roast sweet potato, corn, pulled pork, salsa, cheddar

Actual: great for a low thought dinner with the pork brought out from the freezer, and pickled onions made several days ahead. stretched the leftover salsa from Wednesday with another tomato and lime juice, and then had more leftovers for Friday.

Friday lunch - out tex mex lentils, chicken, zucchini, rice, labneh, salsa bowl of leftovers

Friday dinner - gilled cheese with tomato jam
