Oct 30th - time for more soup stock

Saturday lunch - chicken salad sandwiches (cilantro, tomato, mayo, balti seasoning)

Actual: could have used a bit more cilantro and mayo

Saturday dinner - flank steak fajitas with cheddar, fried onions, roasted tomato, horseradish mayo

Actual: the tortillas were perfect with this

Actual: very good.

Monday lunch - chicken quesadilla (leftover chicken salad + cheese + tortillas)

Actual: I probably should have added a bit more tex-mex spicing, but it was surprisingly effective. Also, those tortillas need to be used up very soon, they are getting a bit dry.

Monday dinner - butter chicken paneer on roast sweet potato home fries

Actual: scrambled eggs on toast. Work was draining emotionally.

Tuesday - zucchini-paneer fritters

Actual - ??? We must have had something

Wednesday - eggplant shakshukka

Actual - zucchini fritters

Thursday dinner - butter chicken on roasted sweet potatoes

Friday lunch - green beans, noodles, fried egg, bocconcini, cilantro, tahini sriracha dressing


Tuesday-whenever: need to finish up the green beans with lunches. Probably a mix of eggs and rice and sauces. There is some red lentil stew to use as well

- green beans with miso-butter is delicious
