Week of Oct 3 - vacation (feta, green beans)


Sunday lunch: green beans, rice noodles, curried coconut butternut squash, fried onions 

Actual: way too much lemongrass and curry. Tried to compensate with peanut butter, sugar, lime juice

Sunday dinner: chicken breast, napa cabbage, rice, ssamjang sauce, mayo 

Actual: quite nice for very little effort

Monday lunch: green beans, hard boiled egg, rice, ssamjang sauce

Monday dinner: Cubano bowl - roast sweet potato home fries, pulled pork, roasted pepper, feta, mustard sauce, gherkins

Actual: very good. mustard sauce mixed in mayo and yogurt. could have added more gherkins

Tuesday lunch: green beans, rice, curried butternut squash soup

Actual: way too much ginger and/or lemongrass. peanut butter helped

Tuesday dinner: zucchini-feta fritters, tomato jam

Wednesday lunch: green beans, feta, hard boiled eggs, pomegranate dressing, walnuts

Wednesday dinner: ramen out 

Thursday lunch: quiche (feta, spinach), tomato jam takeout sandwiches for our long walk

Thursday dinner: shashukka takeout chicken
