Week of Sept 27 - start of a vacation

roast butternut squash, roast eggplant, tomato jam, chicken


Saturday lunch: coconut curried roast butternut squash soup with mung beans, lime juice

Saturday dinner: fried rice with cabbage, chicken, egg and lap cheong

Actual: very heavy on the ginger. I didn't eat much of this as I was full from lunch

Sunday lunch: eggplant caponata on grilled chicken, toasts

Actual: miso-parmesan eggplant and chicken with red pepper flakes on penne. pretty good. Might have been fun adding capers.

Sunday dinner: likely out 

Monday lunch: roasted butternut squash, tomato jam, cilantro chimichurri, feta, eggs (https://www.simplyrecipes.com/recipes/roasted_winter_squash_with_cilantro_chimichurri/)

Tuesday lunch: ramen with pork belly, eggs (https://glebekitchen.com/momofuku-pork-belly/)

Actual: had this Monday lunch and Tuesday dinner. The pork belly would probably have been better with another 30 minutes in the oven, but it was still pretty tasty with a fried egg, some cilantro

Tuesday dinner: quesadillas, pico de gallo 

Wednesday lunch: roasted butternut squash, feta, bacon, lentils, pomegranate dressing, tahini (https://vikalinka.com/roasted-butternut-squash-with-spiced-lentils-feta-and-pine-nuts/)

Wednesday dinner: sweet potato home fries, braised meat, pico de gallo

Actual: made this on Thursday and had it with bacon and a fried egg rather than braised meat

Thursday lunch: curried butternut squash and apple soup, bacon

Actual: made soup on Tuesday without the apple or bacon and ate it for several lunches in a row. Very good with a dollop of peanut butter and a bit of lime juice 

Thursday dinner: panko crusted zucchini and salmon fritters, tomato jam 

Friday lunch: roast butternut squash, boiled eggs, tamarind sauce, fried onions

Friday dinner: fried rice with chicken and napa cabbage
